Zucchini Bread

We have grown the most incredibly delicious and huge zucchini this year. Having just picked the last of it, we definitely needed something to do with all of this beautiful vegetable. Well, here is the BEST and EASIEST recipe for Zucchini Bread I have ever tried:
2 cups flour
2 cups sugar
1 cup oil
3 eggs
2 cups grated zucchini
1 cup raisin ( I substituted craisins, they aren't as sweet)
1 1/2 cup chopped nuts ( be sure pecans are included)
1 Tablesppon cinnamon
2 Teaspoons baking soda
2 Teaspoons baking powder
1 Teaspoon sea salt
2 Teaspoons Vanilla

Mix all ingredients together well. Pour into greased and floured loaf pans ( 1 large or two regular sized pans) for about 1 1/2 hours at 350 degrees. Freezes well.

Three Days with Martin Black

We just spent three terrific days with Martin working in our A-pen. Emily ( Kitching, Eclectic Horseman) and Martin were editing his new DVD on roping, then they came over to our place in the afternoon. An 'impromptu' gathering, it was great fun. Our horses got better, as did the riders. It was challenging for me, to say the least. :-). Christy, my mare, and I hung in there and had a blast.
